Pumpkin and Apple Soup: A Seasonal Delight

For autumn, nothing beats a hot bowl of soup made with apples and pumpkin. There is a rich flavor of apples and the sweetness of pumpkin in this creamy soup. Ingredients:

  • One pumpkin of medium size

  • Chop, core, and peel two large apples.

  • One large onion, diced

  • two minced garlic cloves

  • two tablespoons of olive oil

  • Four cups of vegetable broth (ideally organic)

  • One-fourth cup of pure maple syrup (to add sweetness)

  • One teaspoon of finely ground cinnamon

  • Half a teaspoon of ginger powder

  • Half a teaspoon of ground nutmeg

  • One-fourth teaspoon of ground cloves

  • Add salt and black pepper as required.

  • Add half a cup of coconut milk for creaminess

  • Garnish with optional pumpkin seeds.

  • Use parsley or fresh sage leaves for garnishing.

Instructions:

Cut the pumpkins in half and remove the seeds: Spread the halves on a baking sheet and roast for 45 minutes or until soft, at 400°F (200°C). After cooking, set the pumpkin aside. You can skip this step if you're using organic canned pumpkin puree


Saute the spices: Spices should be sauteed by heating two tablespoons of olive oil in a large pot over low to medium heat. Then, saute the chopped onions for about five minutes.  Add some garlic and cook for another few minutes.


Cook the apples: Add the chopped apples in a pot and cook it for fifteen minutes. Keep it aside.


Blend the ingredients: Mix the pumpkin puree and vegetable broth. Add some spices, such as cloves, nutmeg, ginger, and cinnamon. Leave the mixture to continue to cook for fifteen minutes.


Blend the soup: Use a blender to blend the soup. Add some coconut milk for creaminess.


Add flavor and sweetener: Add the pure maple syrup to sweeten the soup. Add salt and black pepper as required.


Present the soup: Divide the soup into separate bowls and serve with pumpkin seeds and fresh parsley leaves.
